Ingredients

  • 1/2 cup maida (all-purpose flour)
  • 1/4 tsp yeast
  • 3–4 tbsp milk (warm)
  • 2 tbsp butter (softened)
  • 3 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 2 tbsp cream cheese (softened)
  • 3 tbsp powdered sugar
  • a few drops vanilla extract

Procedure

Warm the milk until lukewarm. Add the yeast and a pinch of sugar and let it sit for 5–10 minutes until foamy.
Mix the flour with the yeast mixture and 1 tbsp of the softened butter. Knead into a soft, smooth dough, adding milk as needed. Cover and let rise for 1–1.5 hours until doubled.
Mix the brown sugar and cinnamon together in a small bowl and set aside.
Punch down the dough and roll it out into a thin rectangle on a lightly floured surface. Spread the remaining softened butter evenly over the surface, then sprinkle the cinnamon sugar mixture on top.
Roll the dough tightly from the long end into a log. Cut into equal portions and place in a greased baking dish. Cover and let rest for 20–30 minutes.
Bake at 180°C for 15–18 minutes until lightly golden on top.
While the rolls cool, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Spread over the warm rolls and serve.

Recipe Notes

• chilling the dough gives thicker cookies

• sprinkle flaky sea salt immediately after baking for a bakery-style finish

• cookies continue cooking while cooling, so slightly underbake for gooey centres
