Chocolate Chunk Cookies

Ingredients
100g butter
100g brown sugar
150g caster sugar
2 eggs
1/2 tsp baking soda
1 tsp vanilla extract
1/2 tsp coffee powder
1 cup maida (all-purpose flour)
150g chocolate chunks
Procedure
Whisk the melted butter, granulated sugar, and brown sugar on until combined.
Add the egg, coffee powder, baking soda and vanilla extract and mix.
Add the flour and fold with a spatula until just combined. Fold in chocolate chunks.
Cover and refrigerate for at least 3 hours, ideally overnight.
Scoop large cookie balls onto a tray and bake at 180°C for 10-12 minutes.
Cool slightly before eating.
Recipe Notes
• chilling the dough gives thicker cookies
• sprinkle flaky sea salt immediately after baking for a bakery-style finish
• cookies continue cooking while cooling, so slightly underbake for gooey centres
