Vegetarian California Roll
Sushi sounds complicated, but once you get all of the ingredients and try it out, you'll stop buying sushi at restaurants.

Ingredients

  • 2 sheets Nori
  • 1/2 cup dry sticky rice
  • 1 tbsp vinegar
  • 1/2 tsp salt
  • 1/2 avocado
  • 1/2 cucumber
  • 2 tbsp cream cheese
  • toasted sesame seeds
  • 1/8th cup soy sauce
  • wasabi paste, gari, and garnishes (optional)

Procedure

Prepare rice according to package instructions. Once cooked, mix in vinegar and salt.
Slice avocado and cucumber into 1cm thick slices
Lay half a nori sheet on a bamboo mat or a silicon mat. with wet hands, spread half of the rice on the sheet evenly.
Flip the sheet over and spread cream cheese on one edge. Lay cucumber and avocado on top.
Tightly roll the sushi with the help of the mat, tucking everything in. seal the edge with water if necessary.
Cover the sushi roll with sesame seeds and cut into 8 even pieces. Repeat for the second roll. Serve with soy sauce, gari & wasabi.

Recipe Notes

• make sure the rice is completely cooled before using for sushi
