Ingredients

  • 200g ladyfingers
  • 150ml espresso/filter coffee concentrate
  • 100ml water
  • 200g mascarpone cheese
  • 200g whipping cream
  • 150g sugar
  • 1 tsp vanilla
  • 1 tsp coffee powder
  • 1 tbsp rum (optional)

Procedure

Extract your espresso (if you do not have a machine/coffee beans, you can use coffee concentrate liquid available in pouches on blinkit/instamart.)
Add rum, 30g sugar and 100ml of water to it and stir to dissolve. Set aside.
Whip the whipping cream, vanilla, coffee powder and remaining sugar until soft peaks form. Fold in the mascarpone cheese.
Soak half of your ladyfingers one by one in the coffee mixture and layer in the bottom of a dish.
Top with half of your mascarpone mixture. Repeat the previous step and this step.
Dust the top of your tiramisu with plenty of cocoa powder
(Hardest step): Cover and set in the fridge for at least 3 hours, to mature and soak. Enjoy!

Recipe Notes

• you can omit the rum, but it does add depth of flavour.

• taste the frosting once it's made. you may need to add up to 50g more sugar if it doesn't taste sweet enough.
